1/4-pound medium-size shrimp, shelled
1/2 teaspoon black pepper, freshly ground
1 tablespoon Italian parsley, minced
1 (14.5-ounce) can fire-roasted tomatoes, diced
1 teaspoon red pepper flakes
3-5 cloves of garlic, minced
1 medium onion, diced
1 teaspoon avocado oil

  1. In a non-stick frying pan, heat some oil over medium heat.
  2. Then sauté garlic, onion and pepper flakes until the onion has softened and
    is translucent. This should take about 8 to 10 minutes.
  3. Now add black pepper, parsley, tomatoes and onion mixture to a slow
    cooker. Stir to blend then cook for 2 to 3 hours, on low heat.
  4. Add in shrimp, stir and cover. Cook until cooked through, or for 15
    minutes on high heat.
  5. Serve.
